  • 2 tsp. olive oil
  • 1 tsp. kosher salt
  • 1/2 tsp. pepper
  • chives or parsley

    Heat oven to 425°.

    Wash and cut potatoes if large.

    Put potatoes in a 13 x 9-inch shallow dish.
