Oven Spanish Rice

  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 2 Tbsp. shortening or salad oil
  • 1 envelope spaghetti sauce mix
  • 2 (1 lb.) cans tomatoes (4 c.)
  • 1 c. uncooked long grain rice
  • 1/2 tsp. salt
  • 1/2 c. water
  • 2 oz. sharp process American cheese, shredded (1/2 c.)

Directions

    In saucepan, cook onion and green pepper in shortening or salad oil until tender, but not brown; stir in spaghetti sauce mix, tomatoes, uncooked rice, salt and water.

    Simmer 10 minutes, stirring frequently.

    Pour into a greased 1 1/2-quart casserole; cover and bake in moderate oven at 350° for 30 minutes or until rice is done.

    Sprinkle with shredded sharp cheese.

    Makes 4 to 6 servings.
