Ingredients

  • 2 lb. lean stew beef, cut in 1-inch strips
  • 4 large carrots, cut in 1-inch pieces
  • 2 medium onions, cut in 1-inch pieces
  • 2 celery ribs, cut in 1-inch pieces
  • 2 medium parsnips, cut in 1-inch pieces
  • 1 garlic clove, minced
  • 1 (14 oz.) can Italian stewed tomatoes
  • 1 1/2 c. beef broth
  • 1 (8 oz.) can tomato sauce
  • 1/2 c. quick cooking tapioca
  • 1/2 tsp. dry thyme leaves
  • 1/2 tsp. oregano
  • 1/2 tsp. salt

Directions

    In a 5-quart Dutch oven combine all ingredients.

    Cover and bake at 300° for 2 1/2 to 3 hours.

    Stir every hour until meat and vegetables are tender.
