- 2 lb. lean stew beef, cut in 1-inch strips
- 4 large carrots, cut in 1-inch pieces
- 2 medium onions, cut in 1-inch pieces
- 2 celery ribs, cut in 1-inch pieces
- 2 medium parsnips, cut in 1-inch pieces
- 1 garlic clove, minced
- 1 (14 oz.) can Italian stewed tomatoes
- 1 1/2 c. beef broth
- 1 (8 oz.) can tomato sauce
- 1/2 c. quick cooking tapioca
- 1/2 tsp. dry thyme leaves
- 1/2 tsp. oregano
- 1/2 tsp. salt
Directions

1In a 5-quart Dutch oven combine all ingredients.

2Cover and bake at 300° for 2 1/2 to 3 hours.
