Ingredients

  • 2 lb. beef chuck
  • 1 onion, quartered
  • 4 carrots, pared and halved
  • 4 celery stalks, cut
  • 1/2 green pepper, diced
  • 1/4 c. quick cooking tapioca
  • 1/4 c. dry bread crumbs
  • 2 c. (1/2 lb. fresh) mushrooms
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 (1 lb. 12 oz.) can tomatoes (undrained)
  • 3/4 c. dry red wine

Directions

    Combine all ingredients in a large Dutch oven with tight cover.

    Cook in a 300° oven, covered, for 4 hours.

    Do not uncover while cooking.
