Ingredients
- 2 lb. chuck
- 1 large or 2 small onions
- 6 carrots
- 6 celery stalks
- 1/2 green pepper
- 1/2 lb. sliced mushrooms
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 lb. can diced tomatoes
- 3/4 c. dry red wine
- 1/4 c. dry bread crumbs
- 1/4 c. quick cooking tapioca
Directions

1Cut meat into 2-inch cubes.

2Peel and halve carrots.

3Quarter celery stalks.

4Cut onion in eighths.

5Combine all ingredients in large Dutch oven with tight cover.

6Cook in 300° oven for 4 hours. Do not uncover while cooking.

7Pan may be covered with foil under the cover to insure tightness.

8Serves 6 generously.
