Overnight Pineapple Cake

  • 40 Ritz crackers, crushed
  • 1 c. chopped pecans
  • 2 tsp. baking powder
  • 4 egg whites
  • 1 1/2 c. sugar
  • 2 tsp. vanilla
  • 2 envelopes Dream Whip
  • 8 oz. cream cheese
  • 1/2 c. powdered sugar
  • 1 large can crushed pineapple, drained

Directions

    Mix crackers, nuts and baking powder.

    In a large mixing bowl, beat egg whites, adding sugar gradually until thick.

    Add vanilla. Fold in cracker mixture.

    Bake in a greased 9 x 13 x 2-inch pan at 300° until lightly brown, about 20 to 25 minutes.
