- 25 mushrooms, large
- 12 lb crabmeat
- 3 eggs
- 3 tablespoons mayonnaise
- 12 small onion, chopped fine
- 12 cup butter
- 12 cup breadcrumbs
- 12 cup parmesan cheese, grated
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 tablespoon lemon juice
Directions

1Preheat oven to 350F .

2Melt butter in a 3 qt pan over low heat.

3Beat 3 eggs in a bowl.

4Breakup crab meat into small pieces and add to eggs.

5Add mayonnaise to eggs.

6Remove stems from mushrooms.

7Chop up stems and add to egg mixture.

8Add onions, lemon juice, bread crumbs, salt & pepper, and paprika to egg mixture.

9Put mushrooms a few at a time into melted butter, coat, and place mushrooms, round side down, into a baking dish.

10Do all mushrooms.

11Spoon egg mixture from bowl into hollow of each mushroom.

12Pour remaining butter on top of mushrooms.

13Bake in oven for 20 minutes.

14After 15 minutes, sprinkle parmesan on mushrooms and finish baking.
