Oxtail Soup

  • 1 oxtail, cut into 1 or 2-inch pieces
  • flour
  • 2 Tbsp. vegetable oil
  • 6 c. fat free beef stock
  • 3 large carrots, cut in thin rounds
  • 2 leeks, washed and cut into rounds
  • 1 medium onion, peeled and thinly sliced
  • 1/4 tsp. Worcestershire sauce
  • 1/2 tsp. lemon juice
  • salt

Directions

    Wash and dry oxtail pieces and roll them lightly in flour. Heat oil in a large heavy pot and when it is hot, brown the oxtail pieces.

    Add the stock; stir and bring to a boil.

    Cover pot with a loose fitting lid; adjust heat to simmer and cook for 2 hours. Add carrots, leeks and onion.

    Cover and simmer for 1 hour more.
