Oyster Dressing

Ingredients

  • 1 medium onion, chopped
  • 1 bunch green onions, chopped
  • 1/2 c. celery, chopped
  • 2 Tbsp. oil
  • 1 Tbsp. parsley, chopped
  • 8 doz. oysters
  • 1 loaf French bread, broken into small pieces and softened in oyster water

Directions

    In a skillet, saute onion, green onions and celery in oil until tender.

    Add chopped parsley.

    Drain oysters and cut into pieces.
  4. 4
    Add oysters to skillet mixture and cook until liquid is absorbed.

    Remove any hard crusts from the softened bread and add to oyster mixture, cooking until mixed.

    Serves 8.
