Ingredients
- 1 stick margarine plus 2 Tbsp. olive oil
- 2 bunches green onions, chopped
- 1 c. celery, chopped
- 1 c. onions, chopped
- 1/2 c. bell pepper, chopped
- 1 c. fresh parsley, chopped
- 3 or 4 toes garlic, minced
- 1/2 gal. oysters (save water)
- about 1/2 loaf French bread
- 1 tsp. thyme
- 2 bay leaves
- 2 eggs
- salt, pepper and cayenne to taste
Directions

1In heavy skillet, saute seasonings until transparent.

2Add bread that has been soaked in oyster water and squeezed out and chopped.

3Cook about 15 minutes.

4Add oysters, thyme, bay leaves, salt, pepper and cayenne to taste.

5Cook about 15 minutes.

6Let cool to room temperature and add 2 beaten eggs.

7Should dressing be too wet, add a little bread crumbs.
