Oyster Dressing

Ingredients

  • 1 stick margarine plus 2 Tbsp. olive oil
  • 2 bunches green onions, chopped
  • 1 c. celery, chopped
  • 1 c. onions, chopped
  • 1/2 c. bell pepper, chopped
  • 1 c. fresh parsley, chopped
  • 3 or 4 toes garlic, minced
  • 1/2 gal. oysters (save water)
  • about 1/2 loaf French bread
  • 1 tsp. thyme
  • 2 bay leaves
  • 2 eggs
  • salt, pepper and cayenne to taste

Directions

    In heavy skillet, saute seasonings until transparent.

    Add bread that has been soaked in oyster water and squeezed out and chopped.

    Cook about 15 minutes.

    Add oysters, thyme, bay leaves, salt, pepper and cayenne to taste.

    Cook about 15 minutes.

    Let cool to room temperature and add 2 beaten eggs.

    Should dressing be too wet, add a little bread crumbs.
