- 3 tablespoons butter
- 18 cup onions chopped
- 8 ounces oysters
- 1 1/2 cups oyster juice
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1 each garlic cloves
- 2 tablespoons butter
- 2 tablespoons flour, all-purpose
- 1 cup cream heavy
- 1 x salt and black pepper
Directions

1Saute the green onions in butter until they're soft then add oysters, oyster water, thyme, oregano, basil and garlic.

2Stir gently.

3Make a roux from the butter and flour and add to the above mixture.

4Simmer this sauce for 5 minutes and then remove it from fire.

5Add the cream to the sauce and keep the mixture warm.

6Season with salt and pepper to taste.
