- 2 Tbsp. flour
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. water
- 1 pt. oysters and liquid
- 1 qt. scalded milk
- 1/4 c. butter
Directions

1Combine flour, salt, pepper and water; blend well to make a smooth paste.

2Simmer oysters and the liquid they are packed in until the edges of oysters curl.

3Add slowly the paste to oysters, stirring to prevent lumps.

4Pour this mixture into the scalded milk and remove from heat.

5Cover; let stand for 15 minutes to improve the flavor.

6Reheat briefly, adding the butter.

7Serve with oyster crackers.
