Ingredients

  • 1 2/3 c. sifted flour
  • 1/4 tsp. baking powder
  • 1 tsp. soda
  • 1/8 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/3 c. shortening
  • 1 1/3 c. sugar
  • 1/2 tsp. vanilla
  • 2 eggs
  • 1 c. mashed, canned or cooked pumpkin
  • 1/3 c. sherry
  • 1/2 c. chopped nuts

Directions

    Sift together flour, baking powder, soda, salt, cinnamon and nutmeg.

    Cream together shortening, sugar and vanilla.

    Add eggs, 1 at a time, and beat well after each.

    Stir in pumpkin.

    Add dry ingredients alternately with sherry and blend well.

    Stir in nuts. Turn into well-greased 9 x 5-inch loaf pan.

    Bake at 350° for 1 hour or until a cake tester inserted in center comes out clean. Turn out on a wire rack to cool.

    Wrap and refrigerate until ready to slice.
