Ingredients

  • 4 chicken breast halves, boned and skinned
  • 1 tsp. each salt and paprika
  • 1/4 tsp. pepper
  • 1/2 lb. mild Italian sausage
  • 1 (14 1/2 to 16 oz.) can whole tomatoes
  • 2 cans chicken broth (13 3/4 oz. or 14 oz. each)
  • 1/2 tsp. turmeric
  • 1/4 tsp. saffron
  • 2 c. Uncle Ben's converted rice
  • 1 large onion, cut into wedges
  • 2 cloves garlic, minced
  • 1 lb. medium shrimp, cooked, peeled and deveined
  • 1 green pepper, cut into strips
  • 10 clams, cleaned and steamed

Directions

    Cut chicken breasts into 1/2-inch strips.

    Combine paprika, salt and pepper in a small bowl.

    Add chicken and stir until all seasonings are worked into chicken.

    Cut sausage into 1/4 inch pieces; remove casing.

    Drain and coarsely chop tomatoes.

    Add enough water to chicken broth to make 3 3/4 cups.

    Bring to a boil in a 12 inch skillet.

    Stir in turmeric, saffron, rice, onion, garlic, chicken, sausage and tomatoes.

    Reduce heat, cover tightly and simmer 20 minutes.

    Remove from heat.

    Stir in shrimp and green pepper; top with clams.

    Let stand, covered, until all liquid is absorbed, about 5 minutes.
