- 1/2 lb. Italian sausage
- 1 lb. shrimp, shelled
- 12 mussels, scrubbed
- 12 small clams in shell
- 2 lb. chicken (I use wings)
- 4 Tbsp. olive oil
- 1 green pepper, chopped
- 3 medium onions, chopped
- 1 red pepper, chopped
- 2 gloves garlic, minced
- 2 large tomatoes, chopped
- 1 c. peas
- 1 1/2 c. white rice
- 2 tsp. salt
- 1 tsp. saffron (optional)
- 3 1/2 c. clear chicken broth
- 5 Tbsp. white wine
- 1 bay leaf
Directions

1If you don't have a paella pan, the broiler pan with your oven is large enough to use.

2In Dutch oven, heat oil.

3Add peppers and onions.

4Cook until tender.

5Add garlic, tomatoes and peas.

6Stir in rice, salt and saffron.

7Coat rice well and remove from heat. Transfer to prepared pan (sprayed with Pam).
