Ingredients

  • 4 boneless, skinless chicken breasts (about 1 1/4 lb.)
  • salt and white pepper
  • 1 Tbsp. butter
  • 3 Tbsp. finely chopped shallots
  • 1 tsp. finely chopped garlic
  • 4 plum tomatoes, cut into small cubes
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. tomato paste
  • 4 Tbsp. chopped fresh parsley leaves
  • 1 Tbsp. olive oil
  • 1 tsp. dried tarragon
  • 1/2 c. dry wine
  • 4 Tbsp. drained capers

    Sprinkle the chicken with salt and pepper.

    Heat the oil and butter in a heavy skillet.

    Add the chicken breasts and saute over medium-high heat until lightly browned, about 5 minutes.

    Add the shallots and garlic around the chicken and cook briefly.

    Add the tarragon, tomatoes, vinegar, capers, wine and tomato paste. Stir and blend well; bring to a boil, cover and simmer for 5 minutes.
