- 1/3 cup cornmeal
- 1/3 cup flour
- 3/4 teaspoon salt
- 1 teaspoon pepper
- 1/4 cup parmesan cheese, grated
- 1 egg
- 2 tablespoons water
- 2 lbs eggplants
- butter, enough for pan frying
Directions

1Sift together cornmeal, flour, salt and pepper.

2Stir in cheese.

3Beat egg and water.

4Cut eggplant into 1/2 inch slices.

5Roll in breading.

6Dip into egg mixture.

7Roll again in breading.

8Pan fry in butter over medium heat about 5 minutes per side.
