Pan Roasted Garlic Chicken

Ingredients
- 2 large chicken breasts (with bones)
- 2 Tbsp. olive oil
- 2 garlic cloves, sliced
- 1 1/2 to 2 c. water*
- 1/2 c. sliced mushrooms
- salt and pepper to taste
Directions

1With a cleaver or sharp knife cut each chicken breast into 4 pieces.

2Put aside.

3Slice garlic.

4In large pot or Dutch oven heat olive oil.

5Brown garlic in oil.

6Add chicken and brown well on both sides.

7Add 1 cup of the water and reduce heat to low-medium. Pot roast chicken for about 1 1/2 hours, until fork-tender.

8(Add mushrooms for the last 15 minutes.)

9Salt and pepper to taste. Serve with pan drippings over pasta or rice.
