- 4 (6-oz) grouper fillets, about 1 inch thick
- kosher salt, pepper
- canola oil

1Preheat oven to 400 deg. Heat a large cast iron skillet over med-high heat.

2Season fish with s & p, make sure fillets are dry before seasoning.

3Add enough canola oil to hot pan to thinly cover. heat oil about 10 sec. add fillets. do not touch for 4 min. Turn the fish over and place the skillet in oven for 7 - 8 min
