- 2 c. all-purpose flour
- 2 Tbsp. sugar
- 4 tsp. baking powder
- 1 tsp. salt
- 2 eggs, beaten
- 1 1/2 c. milk
- 1/4 c. oil or melted butter
Directions

1Put flour, sugar, baking powder and salt in mixing bowl. Combine eggs, milk and oil or butter; add to dry ingredients.

2Beat quickly only until large lumps disappear.

3If batter thickens upon standing, thin with 1/4 to 1/2 cup milk.

4Bake on 375° griddle until bubbles break and edges are cooked.

5Turn and bake other side.

6Serve immediately.

7Yields 16 (4-inch) pancakes.
