Pancetta Omelette

Ingredients

  • 8 None large eggs
  • 2/3 cup milk
  • 3 oz Cheddar cheese, grated
  • 3 None green onions, finely sliced
  • 2 tbsp vegetable oil
  • 3.5 oz pancetta, sliced
  • 1 None large tomato, sliced
  • 1 None medium zucchini, sliced into thin strips
  • None None mixed greens, to serve

Directions

    Preheat broiler. In a medium bowl, combine eggs, milk, 1/2 the cheese and green onions. Season to taste.

    Heat oil in an 8 inch nonstick frying pan over medium heat. Add egg mixture. Cook, covered, for 6-8 mins, until set. Top with pancetta, tomato, zucchini and remaining cheese. Transfer to oven and broil for 1-2 mins, until cheese is melted and lightly browned.

    Cut omelette into wedges. Serve with mixed greens.
