  • 1 cup blanched almonds, lightly toasted (you can substitute 1 cup pine nuts here, if desired)
  • 1-2 tsp flour
  • 1/2 cup sugar
  • 1 tsp lemon zest
  • 1 egg, beaten
  • Outside of cookie:
  • 1/2 cup butter, at room temperature
  • 1 egg
  • 1 cup sugar
  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1 1/2 cup raw pine nuts
