Ingredients

  • 4 ounces white rum
  • 2 ounces Simple Syrup (see Note)
  • 1 ounce fresh lime juice
  • 1 1/2 teaspoons pastis, preferably Pernod
  • Six 1-inch chunks of ripe papaya
  • 2 cups ice cubes
  • 2 tarragon sprigs, for garnish

Directions

    In a blender, combine the rum, Simple Syrup, lime juice, pastis, papaya chunks and ice and blend until smooth.

    Pour into 2 large, chilled martini glasses and garnish each drink with a tarragon sprig.
