- 2 broiler fryer chickens
- 2 tsp. salt
- 2 tsp. paprika
- 3 Tbsp. milk
- 2/3 c. dry bread crumbs
- 2 Tbsp. butter or oleo
- 1/4 c. butter or oleo, melted
- salt
- 1 c. flour
- 1/4 tsp. pepper
- 2 eggs, slightly beaten
- 1 1/3 c. grated Parmesan cheese
- 2 Tbsp. shortening
Directions

1Heat oven to 400°.

2Do not use chicken wings.

3Remove skin from remaining pieces.

4Salt chicken.

5Coat chicken with a mixture of flour, 2 teaspoons salt, pepper and paprika.

6Combine eggs and milk.

7Dip chicken in egg mixture.

8Roll in mixture of cheese and bread crumbs.

9In oven, melt 2 tablespoons butter and shortening in pan.

10Place chicken, bone side down, in pan.

11Drizzle with melted butter.

12Bake 1 hour.
