Parmesan Potatoes

  • 1/2 c. freshly grated Parmesan cheese
  • 1/4 c. olive oil
  • 1 tsp. red pepper flakes
  • 4 large russet potatoes, cut lengthwise into 8ths
  • 1 tsp. basil

Directions

    Place Parmesan cheese, olive oil and red pepper flakes in a large bowl.

    Add potatoes and toss until well coated.

    Arrange in a single layer on a baking sheet with sides.

    Bake at 325° for 1 hour, turning the potatoes after 30 minutes (using a spatula will help keep the coating from tearing off).

    Remove from oven when golden brown; sprinkle with basil.

    Serve hot.

    Makes 4 servings. Serve with French Prime Rib.
