- 1/2 c. freshly grated Parmesan cheese
- 1/4 c. olive oil
- 1 tsp. red pepper flakes
- 4 large russet potatoes, cut lengthwise into 8ths
- 1 tsp. basil
Directions

1Place Parmesan cheese, olive oil and red pepper flakes in a large bowl.

2Add potatoes and toss until well coated.

3Arrange in a single layer on a baking sheet with sides.

4Bake at 325° for 1 hour, turning the potatoes after 30 minutes (using a spatula will help keep the coating from tearing off).

5Remove from oven when golden brown; sprinkle with basil.

6Serve hot.
