Ingredients
- 2 tbsp butter
- 1 yellow onion, chopped
- 1/4 tsp turmeric
- 2 green chillis (choose the heat you like), sliced
- 2 ripe tomatoes, chopped roughly
- 3 tbsp chopped cilantro leaf
- 2 eggs
- 1 pinch salt and ground black pepper
Directions

1Prepare all the veg and chop the cilantro

2Beat the eggs - to beat them really well, I break them into a clean jar, put the lid on and give them a vigorous shake for 30 seconds

3Melt butter in a cast iron skillet

4Add onions and cook for two minutes on medium heat

5Add turmeric and cook for another minute

6Add the chillis, tomatoes and cilantro and cook for 30 seconds, stirring
-
7Add the eggs, and cook, stirring for 2 minutes

8Serve on hot buttered toast (optional)
