Parsley Potatoes

  • 2 1/2 lb. small potatoes, peeled and cut into equal size pieces
  • 1/2 tsp. salt
  • 2 Tbsp. chopped fresh parsley, basil or tarragon
  • 2 Tbsp. butter

Directions

    Place potatoes in a saucepan with cold water to cover.

    Add salt.

    Bring to a boil.

    Lower heat and cook, covered until tender, about 20 minutes.

    Drain and return to stove about 1 minute to dry.

    Toss briefly with parsley and butter.

    Serves 6.
