- 2 1/2 lb. small potatoes, peeled and cut into equal size pieces
- 1/2 tsp. salt
- 2 Tbsp. chopped fresh parsley, basil or tarragon
- 2 Tbsp. butter
Directions

1Place potatoes in a saucepan with cold water to cover.

2Add salt.

3Bring to a boil.

4Lower heat and cook, covered until tender, about 20 minutes.

5Drain and return to stove about 1 minute to dry.

6Toss briefly with parsley and butter.

7Serves 6.
