Parsley Soup

Ingredients

  • 1 qt. diced potatoes
  • 1 c. diced onion
  • 1/4 c. butter
  • 1/4 tsp. curry powder
  • 1 tsp. Worcestershire
  • 1 1/4 c. water
  • 2 c. parsley (no stems)
  • 3 c. chicken stock
  • 3 c. milk
  • 1 c. heavy cream
  • 1/4 tsp. pepper

Directions

    Combine and bring to a boil potatoes, onion, butter, curry powder, Worcestershire and water.

    Simmer until potatoes and onions are tender.

    Combine parsley and chicken stock in blender and blend until smooth; add to potato and onion mixture.

    Combine milk, heavy cream and pepper and add to rest of ingredients.

    Heat and serve or chill and serve cold.
