- 1 1/2 lb. red potatoes, scrubbed
- 1 Tbsp. oil
- 1 onion, chopped
- 1 clove garlic or 1/4 tsp. garlic powder
- 1 c. chicken broth or stock
- 1 c. fresh chopped parsley, divided
- 1/2 tsp. pepper
Directions

1Peel a strip of skin off of potatoes in the middle.

2Place potatoes in cold water.

3Heat large skillet over medium-high heat. Add oil.

4Saut onion and garlic for approximately 5 minutes. Add broth and 3/4 cup parsley; bring to a boil.

5Place potatoes (one layer) in skillet.

6Return to boil.

7Reduce heat.
-
8Simmer, covered, for 10 minutes or until potatoes are tender. Remove potatoes with slotted spoon to a serving bowl.

9Add pepper to skillet mixture; stir.

10Pour over potatoes.

11Sprinkle with remaining parsley.
