- 24 vanilla wafers
- 2 (8 oz.) pkg. softened cream cheese
- 3/4 c. sugar
- 2 eggs
- 1 Tbsp. lemon juice
- 1 tsp. vanilla extract
- 1 (22 oz.) can cherry pie filling (or other flavor)
- whipped cream (optional)
Directions

1Place paper liners in 24 muffin cups; put 1 vanilla wafer in bottom of each.

2Combine cream cheese, sugar, eggs, lemon juice and vanilla; beat until smooth and creamy.

3Pour enough filling into muffin cups to fill 2/3 full.

4Bake at 350° for 15 to 20 minutes.

5Cool thoroughly or refrigerate overnight.

6Just before serving, spoon pie filling on top of cheesecake.

7Top with whipped cream.

8Makes 24 cheesecakes.
