Party Pork Chops

  • 4 lean pork chops (3/4 to 1-inch thick)
  • 4 thin slices onion
  • 1/4 c. uncooked rice
  • 1 (1 lb. 13 oz.) can tomatoes
  • 1 tsp. salt
  • pepper to taste

Directions

    Season pork chops with salt and pepper.

    Brown on both sides in lightly greased, hot skillet.

    Put chops in baking dish.

    Top each with a slice of onion, 1 tablespoon rice and cover with whole tomatoes.

    Add remaining tomatoes and juice to dish.

    Cover.

    Bake 1 1/2 hours at 350° or until tender.
