- 1 Parmesan cheese freshly grated, plus extra to serve
- 2 tablespoons butter melted
- grated nutmeg pinch of freshly
- 3 eggs lightly beaten
- 4 cups meat stock
- salt
Directions

1Combine the bread crumbs, Parmesan, melted butter, nutmeg, eggs and a large pinch of salt in a bowl. The mixture should be fairly firm; if it is too soft, add more break crumbs.

2Bring the stock to a boil in a pan. Hold a potato masher with fairly large holes over the pan and press the bread crumb mixture through it to form short, worm-shaped dumplings. Serve with Parmesan
