- 12 None large passion fruits, pulp scooped out, skin reserved
- 1/3 cup lemon juice
- 2 1/2 cups granulated sugar (approximately)

1Place passion fruit skins in a large saucepan. Add lemon juice and 6 cups water. Cover and bring to a boil. Reduce heat and simmer for 20-30 mins, until pulpy remains inside of skins puff up and become soft enough to remove from outer layer. Drain, reserving liquid.

2Scrape pulp from skins, discarding outer layer. Measure pulp. For every 1 cup pulp, measure out 1 cup sugar. Place pulp and sugar in a large saucepan along with reserved liquid. Stir over medium heat until sugar dissolves. Bring to a boil and boil rapidly, without stirring, until mixture wrinkles when placed on a cold saucer and a finger is pushed through it. This will take about 40 mins.

3Stir in reserved passion fruit pulp. Let cool.
