Passionfruit Applesauce

Ingredients

  • 3 lbs apples, peeled, cored and quartered (your choice of variety)
  • 1/3 cup passion fruit juice, strained (or nectar)
  • 1/2 vanilla bean, split
  • 2 slices ginger, 1/4-inch, gently crushed
  • 1/2 cup mirin
  • 3 tablespoons honey (or to taste)

Directions

    Place all ingredients in a heavy non-reactive saucepan over medium heat.

    Cover and cook until apples are very soft, 10-15 minutes. Reduce temperature if apples start to boil over.

    Remove from heat and take out ginger and vanilla bean.

    Place apple mixture in food processor and puree into a smooth sauce.
