Passover Macaroons

- 6 egg whites
- 1/2 tsp. salt
- 1 c. sugar
- 6 or 7 blanched almonds
- 1/4 c. matzo meal
- 1/2 tsp. rum flavoring
Directions

1Beat egg whites and salt until soft peaks form.

2Add sugar 2 or 3 tablespoons at a time until egg whites form firm peaks.

3Grind or chop almonds very fine, then fold together all ingredients.

4Drop by teaspoonfuls onto oiled baking sheet.

5Flatten slightly with spoon or knife.

6Bake at 350° for 20 minutes or until lightly browned and firm.

7Let cool slightly, lift off baking sheet with spatula and finish cooling on wire rack.

8Yields about 6 dozen small macaroons.
