- 2 Tbsp. low-fat buttermilk
- 2 Tbsp. Parmesan cheese
- 3 oz. skinned boneless chicken breast, pounded to about 1/4-inch thick
- 1 tsp. flour
- 1/2 tsp. salt
- dash of garlic powder, onion powder and pepper
- 3 Tbsp. dried bread crumbs (plain or Italian)
- 1 tsp. oil or 1 Tbsp. diet margarine
Directions

1Combine buttermilk and cheese.

2Sprinkel chicken with flour and seasonings, then dip in buttermilk mixture coating both sides and using entire mixture.

3Dip chicken into crumbs, turning to coat both sides.

4In small nonstick skillet, heat oil.

5Add chicken. Cook, turning once until done.

6Serves 1.
