Ingredients

  • any leftover pasta
  • 1 small chopped onion
  • 2 or 3 small chopped garlic cloves
  • 1 small shredded carrot
  • 2 Tbsp. chopped celery
  • 2 to 3 Tbsp. chopped sun-dried tomatoes
  • any leftover meat, chopped
  • any leftover vegetables, chopped
  • Parmesan cheese
  • salt and pepper

Directions

    In heavy pan, sprayed with cooking spray, saute onion, carrot and celery until tender.

    Add sun-dried tomatoes, leftover meat, vegetables and garlic.

    Continue to saute until leftovers are warm.

    Add leftover pasta to pan; salt and pepper to taste and heat through.

    (A little extra pepper really makes this taste better.)

    Transfer servings to warm plates and sprinkle with Parmesan cheese.
