  • 2 envelopes unflavored gelatin
  • 4 Tbsp. cold water
  • 1/2 c. sugar
  • 1 large can crushed pineapple and juice
  • 1 c. boiling water
  • 3 small pkg. dessert topping mix or use Cool Whip
  • 1 tsp. lemon juice
  • 1 large angel food cake, torn into 1-inch pieces
  • 1 can shredded coconut

Directions

    Dissolve gelatin in cold water.

    Add hot water.

    Add to sugar, lemon juice and pineapple.

    Chill until thickened.

    Prepare 2 packages dessert topping mix according to directions on package (or use Cool Whip).

    Fold into pineapple gelatin mixture.
