- 1 lb. package of short pasta such as penne or rigatoni
- 1/2 lb. (225 g) fresh whole milk ricotta
- Salt
- Pepper
- Parmigiano
Directions

1Bring a pot of water to boil.

2Toss a heaping handful of coarse salt into the water, and add the pasta.

3Cook the pasta al dente according to the time specified on the package.

4Drain the pasta, preserving two cups of the cooking water.

5Transfer the pasta back into the pot, and add the ricotta to it.

6Mix the ricotta into the pasta, slowly adding as much of the preserved cooking water as is needed to achieve a creamy sauce.

7Serve immediately with a grating of Parmigiano and, if desired, freshly ground black pepper.
