    Saute the pasta in a large pan with some oil for a few minutes until it browns.

    Beat the eggs lightly in a bowl with the grated cheese and mix well. Add the egg white, folding it in carefully with a wooden spoon. Add a pinch of salt and black pepper to taste.

    Add the cheese cubes to the pasta and pour the egg mixture over it.

    in an omelet pan, cook the egg mixture on both sides until golden and soft.
