  • 1 lb bow tie pasta
  • 12 cup olive oil
  • 14 cup fresh lemon juice
  • 14 cup chopped fresh basil
  • 2 cups fresh Baby Spinach, washed and drained
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 14 teaspoon black pepper
  • 6 plum tomatoes, chopped
  • 14 cup sun-dried tomato, thinly sliced
  • 1 lb large cooked shrimp, thawed if frozen

Directions

    Cook the pasta according to the package directions; drain, rinse with cold water and drain again.

    In a large serving bowl, combine the remaining ingredients and mix well.
