Pasta Frittata Pie

Ingredients

  • 5 large eggs
  • 1/3 c. grated Parmesan cheese (fresh is best)
  • 1/4 c. milk
  • 4 c. cooked pasta (leftover is fine; ravioli, noodles, etc.)
  • 1/4 tsp. salt
  • pepper to taste
  • 1/2 Tbsp. butter
  • 1 Tbsp. chopped fresh basil
  • chopped fresh mushrooms, sweet red pepper bits, black olives and chopped ham or bacon (optional)

Directions

    Preheat oven to 350°.

    Butter a round glass pan or a pie pan. Beat the eggs until well mixed in a large bowl.

    Stir in the remaining ingredients except butter including any optional additions.

    Pour the mixture into the buttered pan.

    Cut the butter into bits and distribute across top of mixture.

    Place in oven and cook for 10 minutes.

    Remove from oven and mix very lightly. Return to oven and bake an additional 10 to 15 minutes or until knife inserted in center comes out almost dry.

    Cut into wedges and serve.

    Good with a salad and crusty fresh rolls.
