- 12 oz. fettuccine, pre-cooked
- 2 oz. scallions, chopped
- 4 mushrooms, sliced
- 2 carrots, cut on a bias
- 2 green peppers, julienne
- 2 red peppers, julienne
- 1 bunch broccoli, blanched
- 1/4 c. heavy cream
- 2 tsp. garlic, crushed
- 4 to 8 oz. Parmesan cheese
- 2 tsp. butter
Directions

1Place butter in saute pan.

2Melt and add carrots, mushrooms, peppers, scallions and broccoli.

3Saute about 3 to 5 minutes.

4Once cooked, add heavy cream.

5Bring mixture to a low boil.

6Add fettuccine and stir.

7Add garlic and some of the Parmesan cheese. Stir until Parmesan cheese disappears and then add more cheese. Sauce should be thick, then add seasonings.

8Serve immediately. Serves 2 to 4.
