  • 2 medium Zucchini, julienned
  • 2 medium Yellow Squash, julienned
  • 2 Red Onions, quartered
  • 2 cups Carrots, julienned
  • 3 tbsp. chopped garlic
  • 2 tbsp. dried basil (or 1 cup fresh, chopped)
  • 2 tsp. oregano
  • 2 tsp. dried parsley
  • Salt and pepper to taste
  • 1+ cup olive oil
  • 1 box bow tie pasta

Directions

    Toss all vegetables in enough olive oil to coat; add herbs. Spread out onto 2 cookie sheets and roast in oven at 400° until well done and crispy, about 15-20 minutes, stirring vegetables at least once during baking.
