- 2 cups Carrots, julienned
- 3 tbsp. chopped garlic
- 2 tbsp. dried basil (or 1 cup fresh, chopped)
- 2 tsp. oregano
- 2 tsp. dried parsley
- Salt and pepper to taste
- 1+ cup olive oil
- 1 box bow tie pasta
Directions

1Toss all vegetables in enough olive oil to coat; add herbs. Spread out onto 2 cookie sheets and roast in oven at 400° until well done and crispy, about 15-20 minutes, stirring vegetables at least once during baking.
