Ingredients
- 1/2 c. red wine vinegar
- 1/2 tsp. salt
- 1 Tbsp. Dijon-style mustard
- 1 to 2 cloves garlic, minced
- 1/2 c. olive oil
- ground black pepper to taste
- 1 lb. rotini (or other corkscrew shaped pasta)
- 1 oz. sun-dried tomatoes (not packed in oil)
- 1/2 lb. Mozzarella, cubed
- 1/4 lb. pepperoni or hard salami, cut thin
- 2 tomatoes, cut in pieces
- 4 leaves fresh basil, minced
- 1/2 c. fresh parsley, minced
Directions

1Soak sun-dried tomatoes in hot water for 30 minutes; drain and set aside.

2Cook pasta according to directions on package.

3Run under cold water and drain well.

4While pasta is cooking, prepare dressing.
