  • 1 package ziti or penne macaroni
  • salt
  • 1 package sliced salami
  • 1 package sliced cooked ham
  • 1 package sliced Swiss cheese
  • 1 medium head escarole
  • 13 c. olive oil
  • 3 tbsp. red wine vinegar
  • 1 tbsp. Dijon mustard
  • 1 1/2 tsp. coarsely ground black pepper
  • 13 c. grated Parmesan cheese

    Prepare ziti as label directs, using 1 tablespoon salt in water; drain.

    Rinse with running cold water to cool; drain.

    Meanwhile, cut salami, ham, and Swiss cheese into 1/4-inch-wide strips.

    Thinly slice escarole, discarding any tough ribs.

    In large bowl, stir together olive oil, vinegar, mustard, pepper, and 1 1/4 teaspoons salt until blended.

    Add ziti, salami, ham, Swiss cheese, escarole, and Parmesan cheese; toss to coat.
