Pasta Squash Medley

Ingredients

  • 1 Tbsp. margarine
  • 1 medium onion, thinly sliced
  • 2 zucchini, thinly sliced
  • 4 yellow squash, thinly sliced
  • 1 green pepper, cut in strips
  • 3 medium fresh tomatoes, cut in wedges
  • 1/4 tsp. salt
  • dash of pepper
  • 1/2 c. grated Parmesan cheese
  • 8 oz. spaghetti, cooked

Directions

    Melt margarine in large skillet.

    Add onion; stir briefly. Add squash and pepper; cook for 2 to 3 minutes until crisp-tender. Add tomatoes, salt and pepper.

    Sprinkle cheese over vegetables and toss until cheese melts.

    Serve on spaghetti.
