Ingredients

  • 250 g pasta
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 10 garlic cloves, finely sliced
  • 3 tomatoes, peeled and chopped
  • 1 teaspoon tomato puree
  • 14 teaspoon dried oregano
  • salt & freshly ground black pepper
  • 140 g canned tuna, forked
  • 2 tablespoons sliced black olives
  • 1 splash balsamic vinegar (or to taste)

Directions

    Add the pasta to a pot of salted boiling water and cook for 8 minutes (or as per the instructions).

    Drain and keep aside.

    Heat the oil in a medium saucepan and cook the onion and garlic for around 5 minutes.

    Add the tomatoes, tomato puree, oregano, salt and pepper, and simmer for about ten minutes, stirring until blended.

    Add the tuna, olives and vinegar and simmer for a further 5 minutes to thicken sauce.

    Add the pasta to the sauce and mix well.

    Remove from the heat and serve hot.
