- 10 eggs
- 6 sweet ripened plantains
- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 1/2 can tomato sauce
- 2 cans French-cut string beans
- Adobo (seasoning)
- 2 tsp. Recaito Goya
Directions

1Saute ground beef and pork; shake some Adobo as you saute to taste.

2Add tomato sauce; simmer.

3Add green beans; let simmer. Slice plantains into long strands (5 to 6 each).

4In frying pan, brown plantains and set aside.

5Beat eggs with a pinch of salt. In a large (lasagna type) pan, pour 1/3 of egg mixture.

6Put in microwave for 3 minutes or until a little hard.

7Place 1/2 of plantains on top of egg base; cover whole pan.

8Add meat mixture on top of plantains.

9Add the rest of the plantains, rest of the eggs (make sure to cover the whole pan) and bake at 350° for 45 minutes.
