  • 10 eggs
  • 6 sweet ripened plantains
  • 1/2 lb. ground beef
  • 1/2 lb. ground pork
  • 1/2 can tomato sauce
  • 2 cans French-cut string beans
  • Adobo (seasoning)
  • 2 tsp. Recaito Goya

Directions

    Saute ground beef and pork; shake some Adobo as you saute to taste.

    Add tomato sauce; simmer.

    Add green beans; let simmer. Slice plantains into long strands (5 to 6 each).

    In frying pan, brown plantains and set aside.

    Beat eggs with a pinch of salt. In a large (lasagna type) pan, pour 1/3 of egg mixture.

    Put in microwave for 3 minutes or until a little hard.

    Place 1/2 of plantains on top of egg base; cover whole pan.

    Add meat mixture on top of plantains.

    Add the rest of the plantains, rest of the eggs (make sure to cover the whole pan) and bake at 350° for 45 minutes.
