- Egg wash (1 egg whipped with 2 tablespoons milk)
- 2 1/2 cups all-purpose flour
- 10 ounces (2 1/2 sticks) very cold unsalted butter and cut into small pieces
- 6 to 9 tablespoons ice water
- 2 lemons, zest finely grated
- 3 cups day-old bread cut into 1-inch cubes
- 3/4 pound ground pork
- 1/4 pound ground beef
- 3 eggs, beaten
- 3 cloves garlic, minced
- 3/4 cup grated Parmigiano-Reggiano
- 1 bunch Italian parsley, finely chopped to yield 1/4 cup
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup extra-virgin olive oil
- 2 tablespoons butter
- 1 tablespoons extra-virgin olive oil
- 4 ounces ground turkey
- 4 ounces ground veal
- 4 ounces ground pork shoulder
- 4 ounces prosciutto, finely diced
- 4 ounces mortadella, finely diced
- 1 egg, beaten
- 1 cups Parmigiano-Reggiano, grated
- 1/8 teaspoon nutmeg
- 3 1/2 to 4 cups flour
- 4 eggs
- 1/2 teaspoon extra-virgin olive oil
- 5 tablespoons butter
- 4 tablespoons flour
- 3 cups milk
- 2 teaspoons salt
- 1/2 teaspoon freshly grated nutmeg
- 1/4 cup extra-virgin olive oil
- 4 tablespoons unsalted butter
- 2 medium onions, finely chopped
- 4 stalks celery, finely chopped
- 1 carrot, scraped and finely chopped
- 5 cloves garlic, sliced
- 1 pound ground veal
- 1 pound ground pork
- 1/2 pound ground beef
- 1/4 pound pancetta, minced
- 1/2 cup milk
- 1 (16-ounce) can whole peeled tomatoes, crushed by hand, with the juices
- 1 cup dry white wine
- 2 cups brown chicken stock, recipe follows
- Salt and pepper
Directions

1To assemble the Pasticcio: Preheat the oven to 350 degrees F.

2Roll out the dough to 2 (14-inch) ovals, and each 1/8-inch thick.

3Wrap in plastic and reserve both crusts in the refrigerator.

4Bring the chicken stock to a rapid boil.
-
5Cook all of the tortellini in the stock for about 4 to 5 minutes, or until the pasta is al dente.

6Drain the tortellini and gently toss with the Ragu Bolognesi, just to coat.

7Add 3 whole eggs to the tortellini mixture to bind.
-
8Carefully incorporate the eggs so as not to damage the integrity of the tortellini.

9Reserve this mixture for the assembly.

10Working in layers, place 1 of the crusts in the bottom of a 2 1/2-quart, oval casserole dish.

11Allow the edge of the crust to drape over the sides of the dish.

12Place 1/2 of the meatballs on the bottom of the casserole dish.

13Spoon1/2 of the tortellini mixture on top of the meatballs.

14Drizzle 1 cup of the besciamela sauce on top of the pasta.

15Next, sprinkle 1/2 of the cheese on top.

16Pour the rest of the tortellini mixture into the casserole dish.

17Place the rest of the meatballs on top of the pasta.

18Drizzle the remaining besciamela on top of the meatballs.

19Sprinkle the remaining Parmigiano on the top.

20Top the casserole with the second pie crust.

21Crimp the top and bottom piecrust edges together.

22Create a vent on the top layer of crust with a sharp knife.

23Brush the top of the pasticcio with an egg wash made from one beaten egg and 1 teaspoon of milk.

24Bake in the oven for 1 hour and 20 minutes, or until the crust is a deep golden brown.

25Let rest 15 minutes before serving.

26For Pie Crust: In a large bowl combine the flour, lemon zest and butter with a pastry blender, your finger, or in a food processor until it resembles a coarse meal.

27Add enough water so that the dough just comes together, divide the dough into 2 equal pieces and wrap each piece in plastic.

28Allow to rest in the refrigerator for 1 hour.

29For Meatballs: In a shallow bowl, soak the bread cubes in enough water to cover.

30Remove the bread cubes and squeeze by hand to remove excess moisture.

31In a large bowl, combine the bread, pork, beef, eggs, garlic, Parmigiano, parsley, salt, and pepper and mix by hand to incorporate bread into meat.

32With wet hands, form the mixture into 25 to 28 meatballs, each about golf ball size.

33In a large, heavy-bottomed skillet, heat the oil until almost smoking.

34Add the meatballs.

35Working in batches if necessary to avoid overcrowding the pan, and cook until deep golden brown on all sides, about 10 minutes.

36Drain on paper towels to remove excess oil.

37Reserve browned meatballs for assembly.

38Filling: In a Dutch oven or heavy-bottomed, large saucepan, heat the butter and oil until it foams and subsides.

39Add the turkey, veal and pork shoulder and cook over high heat, stirring occasionally, until the meat is well-browned and begins to release some of its juices.

40Add the prosciutto and mortadella and cook for 5 minutes more.

41Remove from heat and allow to cool.

46Pasta: Mound 3 cups of flour in the center of a large wooden cutting board.

47Make a well in the middle of the flour, add the eggs and oil.

48Using a fork, beat together the eggs and begin to incorporate the flour starting with the inner rim of the well.

49As you incorporate the eggs, keep pushing the flour up to retain the well shape (do not worry if it looks messy).

50The dough will come together in a shaggy mass when about half of the flour is incorporated.

51Start kneading the dough with both hands, primarily using the palms of your hands.

52Add more flour, in 1/2-cup increments, if the dough is too sticky.

53Once the dough is a cohesive mass, remove the dough from the board and scrape up any left over dry bits.

54Lightly flour the board and continue kneading for 3 more minutes.

55The dough should be elastic and a little sticky.

56Continue to knead for another 3 minutes, remembering to dust your board with flour when necessary.

57Wrap the dough in plastic wrap and set aside for 20 minutes at room temperature.

58Roll the pasta into sheets using a pasta machine.

59For the desired pasta sheet thickness, gradually pass the dough through the settings starting with the widest and continuing to the number 9 setting.

60With a pasta cutter or a knife, cut the pasta into 1 1/2-inch squares.

61Place 3/4 teaspoon of filling in the center of each square.

62Fold into triangles, press out any air around the filling, and press to seal the edges.

63Bring the points of the long side together to form a ring, and seal between your fingers.

64Set the tortellini aside on a sheet pan, wrap well with plastic wrap, and refrigerate.

65Reserve for later assembly.

67In a medium saucepan, heat butter until melted.

77Add veal, pork, beef, and pancetta to the vegetables, brown over high heat, stirring to keep meat from sticking together for about 15 to 20 minutes.
